Ingredients

  • 1⁄2 cup vegetable oil
  • 3 large eggs
  • 1 cup light brown sugar, packed
  • 1 1⁄2 cups pumpkin puree
  • 1 1⁄2 tsp pumpkin pie spice
  • 11⁄2tspsalt
  • 1 1⁄2 tsp baking powder
  • 1 3⁄4 cup plus 2 tbsp flour

Directions

  1. Spray a doughnut pan with baking spray and preheat oven to 350 degrees.
  2. Beat the vegetable oil, pumpkin puree, and sugar in a standing mixer.
  3. Add eggs one at a time until well combined and smooth.
  4. Combine flour, pumpkin pie spice, salt, and baking powder in a medium bowl until combined.
  5. Gradually mix in the dry ingredients into the wet.
  6. Fill the donut pan about 3⁄4 of the way full with batter.
  7. Put in the oven for 15 to 18 minutes.
  8. Remove from oven and let them cool for 5 minutes.
  9. Add 1 cup of sugar and 1 tsp of cinnamon into a large Ziplock bag.
  10. Place a few donuts into the bag and shake until donuts are covered.
  11. Remove from bag and place on a cooling rack.
