Pumpkin Donuts

Ingredients
- 1⁄2 cup vegetable oil
- 3 large eggs
- 1 cup light brown sugar, packed
- 1 1⁄2 cups pumpkin puree
- 1 1⁄2 tsp pumpkin pie spice
- 11⁄2tspsalt
- 1 1⁄2 tsp baking powder
- 1 3⁄4 cup plus 2 tbsp flour
Directions
- Spray a doughnut pan with baking spray and preheat oven to 350 degrees.
- Beat the vegetable oil, pumpkin puree, and sugar in a standing mixer.
- Add eggs one at a time until well combined and smooth.
- Combine flour, pumpkin pie spice, salt, and baking powder in a medium bowl until combined.
- Gradually mix in the dry ingredients into the wet.
- Fill the donut pan about 3⁄4 of the way full with batter.
- Put in the oven for 15 to 18 minutes.
- Remove from oven and let them cool for 5 minutes.
- Add 1 cup of sugar and 1 tsp of cinnamon into a large Ziplock bag.
- Place a few donuts into the bag and shake until donuts are covered.
- Remove from bag and place on a cooling rack.
