Muffins are a popular breakfast option that can also be eaten as a snack, lunch, or whenever you’re feeling hungry. These muffins are moist and soft with the perfect banana taste! The recipe can be enhanced by adding chopped walnuts or chocolate chips. Before continuing, it must be known that the recipe calls for three ripe bananas. Don’t have any ripe bananas? No worries! Grab your bananas and place them in a bag. (I used a brown paper bag from Hyvee). Put the bag with the bananas in a dark place, such as in the pantry at the back of the bottom shelf. Leave them there for a day or two and watch as the bananas start to turn brown. Be sure to check on them each day. It should also be noted that this banana muffin recipe is actually a banana bread recipe! I just placed them into muffin tins instead of a bread pan to get individual banana muffins! So if instead, you are wanting some bread, switch out the muffin tins for a bread pan and bake it for 50 minutes. Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼  tsp baking soda
  • 1 cup mashed bananas (3 medium)
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • ¾ cup sugar
  • ¼ cup cooking oil
  • 1 egg.
